Biscotti with Sprouted Mixed Nuts

Ingredients:

  • 140g plain flour, sifted

  • 140g egg whites (from 4 eggs)

  • 60g caster sugar

  • 100g With Love, Gretel Sprouted Mixed Nuts (Himalayan Pink Salt)

  • 50g With Love, Gretel Sprouted Superfoods (Salted Caramel)

  • 50g Apricot

  • 50g Cranberries

Method:

  1. Preheat oven to 180C and line baking pan with parchment paper.

  2. Whisk egg whites until foamy, add in sugar gradually and beat till stiff peaks.

  3. Fold in the sifted flour gently. Mix in nuts and dried fruits until well combined.

  4. Pour the batter into the baking pan and bake for 40 mins.

  5. Remove from oven and let it cool on a rack for 30 mins to an hour.

  6. Preheat oven to 160C and line baking tray.

  7. Cut into thin slices with a serrated bread knife and bake for 20 mins or until crisp, flipping over once.

  8. Cool completely on a wire rack before storing in an airtight container.
