Monkeyhead Mushroom with Cashew Nut Stir Fry

Ingredients:
7 bearhead mushrooms, cut into small chunk
1/3 cup peri peri cashew nuts
dried chilli and curry leaves
1 tsp toasted sesame seeds
1 tsp olive oil
For Sauce:
2 tsp tamari
1 tsp vegetarian oyster sauce
1 tsp coconut sugar
1 tsp corn starch with 1 tbsp water
few drops of sesame oil
Method:
1. In a non-stick pan, add olive oil and fry cashew nuts until toasted and slightly brown.
2. Remove cashew nuts and add dried chilli and curry leaves into the pan. Fry till fragrant. Remove from pan.
3. Add monkeyhead mushrooms and cook for about 5 minutes.
4. Combine sauce ingredients in a small bowl and add to mushrooms. Stir to combine.
5. When sauce reduces inconsistency, add cashew nuts, dried chilli and curry leaves back into the pan, stirring together.
6. Serve and enjoy!
